1.外在感官特征：山楂果重15-26克，果皮涂红，果点黄白色，密集，果皮较粗糙，果实近圆稍扁，顶部具有五棱，果面鲜红或鲜枣红，披腊光，果实顶部有散生黄白色小果点加以点缀，更加秀色。果实每公斤70～90个，最大果重可达40克，山楂果肉粉白至粉红，肉质紧密，味酸稍甜，品质极上。
2.内在品质指标：山楂的果实营养丰富，富含碳水化合物、蛋白质、脂肪、维生素及磷钙铁等人体必需的矿物质，特别是铁钙及维生素C、胡萝卜素、核黄素等的含量很高。其中100g山楂钙的含量为40～47mg、铁的含量为0.47～0.65mg、维生素C含量为47.2～52.8mg、维生素B1的含量为0.01～0.028mg、维生素B2的含量为0.47～0.68mg、总膳食纤维含量为8.01～9.12g、枸橼酸含量为9.83～11.25g、总黄酮含量为3.87～4.22g。另外，山楂还有较强的药用价值和食用价值，具有开胃健脾、行瘀化滞，消炎止咳，解毒止血等多种作用。
