(1) 外在感官特征： 蒜头外面有膜质鳞皮，剥去鳞皮，内有6—10个紫皮蒜瓣，轮生于萎缩的花茎周围，茎基部盘坐，生于多数须根。蒜头直径约5CM，每头新鲜大蒜重量约43-45g，把蒜瓣紫皮和透明薄膜剥去后，即见白色、肥厚发亮的蒜瓣，有浓烈的蒜臭，味辛辣。
