1.外在感官特征：广灵大尾羊的外形特征是：结构匀称，肌肉丰满，眼大微突而灵活，背部宽广平直，四肢粗壮，脂尾圆大。成年公种羊尾长21-35厘米，尾宽22-30厘米，尾厚8-12厘米。成年母羊尾长18-21厘米，尾宽19-22厘米，尾厚5.5-7.9厘米。毛色雪白，皮毛品质好。大尾羊一般是11个月后即可屠宰，曾经试宰9只羊，每只羊饲养13.5个月，平均活重66公斤，屠宰后胴体重38.4公斤，其中净肉33.3公斤，肉脂重2.7公斤，尾脂重7公斤，头蹄重4.1公斤，内脏总重5.7公斤。大尾羊肉营养丰富，肉质鲜嫩，是一种高蛋白质的食物。羊杂是人们常年喜食的营养肉食，高等级的羊胴体，在屠宰车间吊起时，整个体躯显得丰满，两后腿之间呈“U”字形，胴体肌肉发育良好，肌肉纤维间的脂肪沉积较多，呈大理石状。
2.内在品质：广灵大尾羊有着瘦肉多、脂肪少的特点，加之该羊肉有着特殊的生物学和食补价值，因而深受消费者的欢迎。它的内含成分为：每100g羊肉含水分65.0～78.0 g；含蛋白质≥18.0g；含脂肪2.0～4.0 g；含不饱和脂肪酸（以脂肪计）≥40.0g；含磷≥145mg；含钾≥200mg；含钠≤70.0mg；含铁≥1.0mg；含锌≥2.0mg；含能量≥350kJ。
3.安全要求：广灵大尾羊所饲喂的草料，饮用水，要求无毒无污染，看病、防疫、打针、灌药的兽医要有资质证明，严禁雇用无任何证照的兽医行医。在屠宰前15天，严禁打针、灌药和饲喂不安全的草料和饮用水。
