1.外在感官特征：莲菜是莲藕肥大的地下根状茎，洪洞莲藕为当地古老品种--白莲，果实基本为纺锤形，并伴有不规则棱角，大小均匀，皮白如玉。
2.内在品质：洪洞莲藕营养丰富，酥脆无渣，味甘多液，折断可拉丝且有独特清香味，商品性好。每100克产品检测结果表明：水分含量在70%—86%之间，淀粉含量≥10g/100%，维生素C≥25mg/100g，总膳食纤维含量≥1.4g/100g，粗多糖含量≥1g/100g，总黄酮含量≥20mg/100g。主要营养物质均高于其它莲藕养分标准。
3.安全要求：洪洞莲藕产地生态环境符合NY5331-2006《无公害食品水生蔬菜产地环境条件》。生产过程中，严格执行NY5238-2005《无公害食品水生蔬菜生产技术规程》。洪洞莲藕生产产品符合中华人民共和行业标准《无公害食品莲藕》的安全指标，在包装，标识上需符合农业部《农产品包装和标识管理办法》，进入市场的必须遵守《农产品质量安全法》及其它法律法规的有关规定。瓦楞纸箱按GB6543的规定执行，塑料袋按GB4456和GB588—89的规定执行，塑料箱按GB8868—88《蔬菜塑料周转箱》执行。
